Humbaroth was the easiest (or I was lucky) and Mauler next. Zalladel I couldn't do until the end of act 1.

Can you re-do the Legendary Monsters if you die? I had thought that you can only attempt each quest once. Plus, the Legendary Monsters specifically mention that you return to the map if you defeated are instead of following the normal rules for dying.

They aren't "quests". Yeah you can fight them as many times as you want until you win. If you are defeated you return to the map like any other fight (unless you told to do otherwise) and restore your health. Then you can try again or do something else. your choice.
