if I use the ability vanish to avoid damage does lightning work in that round to do damage to my opponent, or does lightning only work when you take health damage in a round?

Lightning only does damage to your opponent when you are struck and suffer health damage (as per the description). Using vanish avoids taking any damage, so lightning would not trigger in that round.
